HEALTHY RECIPE FOR THE LENTEN SEASON

The Lenten season has officially started... with ash Wednesday falling on the same day as Valentines Day.  So... instead of going out to celebrate Valentines Day -- and be tempted to eat beef, chicken and pork -- we just stayed home and cooked something healthy.

Oily fish like mackerel are said to help in cardiovascular disease, prostate cancer, age-related vision loss and dementia. It is a good source of vitamin D, some B Vitamins and selenium. It is also rich in omega-3 fatty acids, a type of fat that is good for health.

INGREDIENTS:

(2) 425 grams, UNI-PAK Mackerel

(6) cloves garlic

(2) medium size eggs

      cooking oil

      salt and pepper to taste

HOW TO COOK:

Drain the mackerel.  Mash.  Add the garlic, salt and pepper.  Put in the eggs. Now you are ready to form your "Mack Balls".  Fry.

Isn't that super easy???  

For garnishing:

We chose to partner this easy mackerel dish with thinly sliced potatoes. Homemade potato chips for the win!!!

And this is the finished product.  So yummy.  You can concoct your own sauce, but plain tomato catsup works well with our palate.
